We have another homemade ice cream recipe to share with you all. If you have been following along with us on our blog for a while you know by now that we are huge fans of homemade ice cream. We have made so many different no-churn ice cream recipes here on our blog like our Cake Batter ice cream, Chocolate Hazelnut, Chocolate Strawberry Ice Cream and so much more. But this one by far is our favorite. We have for you today homemade Mint Chip Ice Cream.
Made with fresh milk, mint extract, and chocolate chips. This ice cream recipe is super creamy and refreshing. You might find it difficult trying not to eat the whole thing.
For this recipe, we made it a little differently than our other no-churn ice cream recipes. So what makes this recipe different from the others on our blog? It does not contain any condensed milk and it does require a few more extra steps but it is so worth it.
As we are writing this we are eating a large bowl of this ice cream. Are you ready to try some Mint Chip Ice Cream? Let’s get into the recipe.
The first thing to do for the recipe is to prep all of our ingredients just to make sure we have everything we need all ready to go. This step isn’t necessary we just find it easier and more organized when putting our recipe together instead of scrambling around the kitchen looking for a measuring cup or teaspoon. Our kitchen isn’t very organized we know it should be but we have a small kitchen so stuff is placed in all different kinds of places. So sometimes it can take a few minutes finding everything we need.
Using a stand mixer or a hand mixer beat together the milk and sugar together until the sugar has dissolved. Then add-in the COLD heavy cream, vanilla extract, mint extract, and the chocolate chips. You can add in mini chocolate chips if you have them. If you don’t have any on hand you can use regular chocolate chips like we did. We also stirred in a few chocolate sprinkles as well just to give this ice cream more of that mint chip look. The sprinkles are optional we just love the way they looked in this ice cream. Mix everything together until well combined.
Pour mixture into a stainless steel baking dish. We poured our mixture into an 8-inch cake pan. Place in the freezer for 45-60 minutes. Remove from the freezer and with a hand mixer or whisk vigorously stir the ice cream mixture for a few minutes. TIP: This step is so much easier with a hand mixture. Place back in the freezer for another 45 minutes and vigorously stir the mixture again. Repeat this step three more times.
Why do we need to stir it vigorously?
By vigorously stirring the ice cream mixture after it has been placed in the freezer for a while this step will make the ice cream creamier. With this step, you are sort of taking on the role of an ice cream maker. You know-how with an ice cream maker churns the ice cream for you. This is sort of the same thing.
After repeating the stirring step three-times place the ice cream back in the freezer and let it sit for 8 hours or preferably overnight.
Now, all that is left grab the ice cream scooper, a bowl, and a spoon and dig in.
Homemade Mint Chip Ice Cream
- 1 ¼ Cup Cold Whole Milk
- 3/4 Cup Granulated Sugar
- 2 Cups Cold Heavy Cream
- 1/2 Tablespoon Vanilla Extract
- 1/2 Tablespoon Mint Extract
- 1/4 Teaspoon Salt
- 1/2 Cup Chocolate Chips Mini Chocolate Chips work too
- Green Food Coloring Optional
- Beat milk and sugar until the sugar had dissolved.
- Stir in the COLD heavy cream, vanilla extract, mint extract, salt, green food coloring, and chocolate chips.
- Place mixture in a stainless steel baking dish. We used an 8-inch cake pan but you can use whatever stainless steel baking dish you have. Place in the freezer for 45 minutes.
- Remove the ice cream from the freezer and stir vigorously for a few minutes with a whisk or hand mixer. TIP: a hand mixer works better for this part.
- Place back in the freezer and repeat step 4 three more times.
- After you have repeated step 4 three times place the ice cream in the freezer and freeze for 8 hours or overnight.
- Scoop yourself a scoop of ice cream and enjoy.
