Memorial Day is coming! Which means outdoor barbeques and picnics. Although we will be celebrating differently this year doesn’t mean we can’t celebrate at home with some great food and drinks.
Starting with this Mango Pineapple Lemonade.
This lemonade is refreshing and really easy to make. You will have lemonade before it can reach no shadow time (bonus points if you get the reference).
This lemonade is like your classic lemonade with a twist. It has delicious notes of pineapple and mango. This drink tastes amazing and is the perfect refreshment to enjoy while catching some sun.
The ingredients you need:
- Pineapple Juice
- Lemons or Lemon Juice (fresh lemons are better)
Tools you will need:
- Blender or large food processor
- Fine Mesh Strainer
- Small Sauce Pan
Making the Simple Syrup:
What is simple syrup? All it is water and sugar. The simple syrup is our sweetener for this lemonade. Simple syrup is a lot better to mix into drinks than just pouring regular sugar into the drink.
In a small saucepan, whisk together the sugar and ½ cup of water on medium-low heat. Whisk constantly until the mixture reaches a boil and the sugar has dissolved. Then let it cool.
You can also make this syrup the day before if you want to save some time.
As our syrup is cooling we can get started on the other portion of the lemonade, the fruits.
Slicing up a Mango:
There is a trick when slicing up a mango.
It is called the hedgehog method.
What you are going to do is slice off the side of the mango away from the core.
Lying flat on the cutting board score the mango into small cubes (don’t cut the skin).
Bend the sides and push up the center to remove the slices of mango.
In a blender, blend the mango and ½ cup of water together until it is smooth.
Using a fine-mesh strainer over a pitcher and pour the mango mixture into it to get all the juices.
You may need to slowly pour the mango mixture a little at a time and use the back a spoon to push it through the strainer.
After you have strained all the mango, stir in the lemon juice, pineapple juice, the remaining water (1½ cups), and the simple syrup.
Grab some tall glasses with ice and pour in your lemonade.
All there is left to do is sit back, relax, and enjoy the sunshine!
Pineapple Mango Lemonade
- 1 Mango, sliced
- 1/4 Cup Pineapple Juice
- 1/2 Cup Lemon Juice
- 6 Tbsp Sugar
- 3½ Cups Water
- In a small saucepan on medium-low heat mix together the sugar and 1/2 cup of water.
- Let it reach a boil and whisk until the sugar has dissolved. Let it cool.
- In a blender add the mango and blend with 1 1/2 cups of water until smooth.
- Using a fine-mesh strainer, strain the mango puree into a pitcher.*Tip: Push down the mango puree through the strainer using the bottom of a measuring cup.
- Stir in the lemon juice, pineapple juice, simple syrup, and 1 1/2 cups water.
- Pour into a tall glass with ice and enjoy!
