Espresso Chip Muffins. A sweet muffin that combines a cup of coffee and a muffin together. Made with espresso chips these muffins are so easy to make. A perfect way to start the morning on a sweet note.

  • 2 cups All-Purpose Flour
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 cup Sugar
  • 1/4 cup Light Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • Pinch of Nutmeg
  • 1 cup Buttermilk
  • 1 cup Espresso Chips Plus more for the tops.
  • 1/2 cup Softened Butter Not Melted


  • Preheat oven to 350° Farenheight. Line a muffin tin with baking liners. Set aside.
  • In a large bowl whisk together the flour, salt, baking powder, baking soda, and nutmeg. Set aside.
  • In a separate bowl cream the butter and sugars together. Then add in the egg and vanilla extract and beat until combined. Add in half of the dry ingredients and mix until combined. Slowly add in the buttermilk and mix. Then add the remaining dry ingredients. Fold in the espresso chips.
  • Fill each cavity with 1/2 cup of batter and bake for 25-27 minutes.

For this recipe we used a Jumbo size muffin pan if you are using a regular size muffin pan the amount of batter that you would use is about 1/4 cup of batter.
